Any place you can eat until midnight gets a big tick in our books, and that\u2019s just what you can do at The Island\u2019s new Italian restaurant.<\/p>\n<\/div>\n

On the second level of the freshly renovated Surfers Paradise boutique hotel, marketing co-ordinator Danielle Barber says The Island Restaurant unveiling marks yet another milestone.<\/p>\n

\u201cThe rooftop been open since November and since then we\u2019ve fully renovated 98 boutique hotel rooms and as of last week we launched our downstairs dining and bar area,\u201d she says.<\/p>\n

\u201cIt\u2019s an Italian inspired menu headed by chef Anthony Fullerton.<\/p>\n

\u201cWe\u2019ve got an awesome wood-fire pizza oven \u2014 it only takes 90 seconds to cook a pizza \u2014 and there\u2019s a few other things in the kitchen that will take our food to the next level.\u201d<\/p>\n

Danielle says the Italian offerings from downstairs will be available to rooftop diners although the rooftop will soon have its own wood-fired oven as well, to be lowered in by crane.<\/p>\n

By the sounds of it, they might want to keep the crane handy for the emergency evacuation of diners who have overindulged in Anthony\u2019s authentic Italian fare.<\/p>\n

\u201cMy background is Italian, I\u2019ve been doing it for quite some time now,\u201d he says.<\/p>\n

\u201cI\u2019m a member of the Italian Chef Federation, I\u2019ve been involved in chef hatted restaurants in Melbourne and I go to Italy every two years to research food and wine.<\/p>\n

\u201cThis will be the 15th restaurant I\u2019ve opened.<\/p>\n

\u201cWhat I focus on with cuisine is being an authentic as possible.\u201d<\/p>\n

Anthony\u2019s vision for authenticity and quality is simple and it translates to every facet of his craft.<\/p>\n

\u201cWhenever I test or hire a chef, I asked them to cook spaghetti aglio e olio, which is a very simple Italian dish,\u201d he says.<\/p>\n

\u201cIt\u2019s basically just spaghetti, olive oil, chilli and garlic, but if you don\u2019t use the right oil, the right spaghetti, if you don\u2019t have the right balance you can tell.<\/p>\n

\u201cIf you can do the simple things well I think that\u2019s the true testament of a good chef.\u201d<\/p>\n

When you\u2019ve got top producer connections that Anthony has, there\u2019s no need to interfere too much.<\/p>\n

\u201cThat\u2019s what makes us different \u2014 we focus on ingredients and produce,\u201d Anthony says.<\/p>\n

\u201cI\u2019ve done a lot of work over the years and built relationships with farmers, so the meat is individually sourced and some products we\u2019re the only place in southeast Queensland to have them.<\/p>\n

\u201cBasically we\u2019re really not skimping on any ingredients in order to produce the best food we can produce.<\/p>\n

\u201cDon\u2019t overwork it, let product speak for itself. That\u2019s what true Italian food is anyway.\u201d<\/p>\n

Aside from the wood-fired pizzas, The Island Restaurant\u2019s signature dishes deliver hearty flavour.<\/p>\n

\u00a0\u201cThe lamb shoulder we\u2019re using lamb from Milly Hill, a small free-range farm in NSW, and we braise it and finish in the wood-fire oven,\u201d Anthony says.<\/div>\n

\u201cThe Bistecca Fiorentina style we\u2019re doing two cuts: a 600g T-bone, a single origin sourced farm T-bone \u2014 natural, organic, traceable,<\/p>\n

\u201cThe second is a 1kg dry aged black angus rib on the bone and that\u2019s intended for sharing.<\/p>\n

\u201cWe\u2019re also doing beautiful, simple whole fresh baked fish, finished with Chianti olive oil, aged balsamic and lemon.<\/p>\n

\u201cSo again it\u2019s clean, simple and lets the produce speak for itself.\u201d<\/p>\n
